Meals of the Week, April 27th - May 3rd, 2025
May the Fourth be with you and welcome to my Sunday Meals of the week post! Yes, I have been waiting all year to be able to say that! lol Most years I forget, but this year I remembered. A little nod to Star Wars there. I am old enough to have seen the original Star Wars film when it came out in the late 1970′s. We saw it in Calgary, Alberta and the lineup to go in stretched down a few blocks. I didn’t think we were going to get inside to see it!
On Sundays (Star Wars aside) I like to share my Meals of the Week with you. All of the delicious meals that I have enjoyed as my main meals over the past seven days. I am determined that my meals will never be boring, that they will always be somewhat nutritious and that they will remain exciting and delicious, all with falling within the limited budget of a pensioner!
These are only my main meals, not including my breakfast or my supper. (I eat my main meal at noonish/early afternoon.) Unless I am eating out, I cook everything myself. Generally speaking, I will have Sunday dinner at my sister’s unless everyone comes here. I will always share a “like” recipe for those occasions that I am eating at Cindy’s or out with friends. Most of the time I do cook my own meals at home.
I was going out with my father once a week to have supper, but I will be honest, it was getting rather expensive and the food was not that great, nor was it very healthy so I have been trying not to go. He does miss me being there, but I have to do what is right for me. I will still go on occasion.
My breakfasts are usually a protein shake, sometimes granola and yogurt with perhaps a naughty drizzle of date syrup, and if I have had pizza the night before, I do like to have cold pizza for breakfast.
My suppers are usually quite light as I don’t want anything heavy laying on my stomach when I go to bed. (Getting older is so much fun!) I will usually have a salad, or some toast, maybe a sandwich (occasionally) or often a bowl of cereal and some fruit. It all depends on how heavy my dinner has been earlier in the day. Sometimes I am just not that hungry come suppertime. I do try to eat something though so that I don’t end up starving too close to bed time. It’s a fine dance at times.
In any case, I do try to always cook for myself. I try to share half of what I cook when I can with my next door neighbor who is very elderly. I noticed that she was no longer cooking for herself and I hated to think of her eating out of cans or frozen meals. I avoid processed foods as much as possible myself as they are usually high in salt, sugar and fat.
I hope that in my sharing these things with you, you will be inspired to want to cook for yourself also. Living alone doesn’t mean that you cannot eat a delicious and varied diet!
SUNDAY, April 27th – Sunday Dinner at my sister’s
I enjoyed a delicious dinner at my sister’s place on Sunday. She cooked a lovely pot roast along with some vegetables, a delicious gravy and the best roast potatoes. They melted in the mouth. Crispy and golden brown on the outsides and fluffy inside.
In it’s place I am sharing my recipe for Onion Pot Roast. It is a delicious pot roast recipe that I have been making for my family for over 40 years and is always well received! I guarantee you will love it!
MONDAY, April 28th – Chicken with Peppers
This is a very old and simple Italian dish which uses very few ingredients. The secret to its success is simmering it covered over low heat until the peppers release their juices and the garlic melts down. This created a lush sauce for the tender pieces of chicken. It cooks slowly and I have to tell you the flavors are totally amazing.
I enjoyed as always with some rice on the side. You don’t really need anything else, except for maybe some crusty bread to sop up all the juices.
TUESDAY, April 29th – Toad in the Hole
Toad in the Hole is one of my favorite British dishes, despite it’s odd name. It is a delicious dish composted of a Yorkshire Batter pudding base, into which sausages are baked, sometimes wrapped in bacon for double the pleasure. You start the sausage in the oven and then once they are partially baked and have released some of their far you pour the pudding batter around.
Altogether this is quite delicious. Serve with mash, gravy and some veggies on the side. I know. A total carb fest. I cooked a full recipe so that I could freeze a few servings for me to have another time. This is a comfort dish I really enjoy and is very family friendly.
WEDNESDAY, April 30th - Spicy Potato Soft Tacos
I tried something completely new on Wednesday and made these delicious Spicy Potato Soft Tacos. I love potato tacos and this recipe was calling my name. Soft flour tortillas, warmed and slathered with plenty of cheese, some spiced crispy tater tots, your favorite taco toppings with a creamy and spicy chipotle sauce drizzle over top!
These were really delicious. I absolutely enjoyed them. I think I ate one and a half and was totally stuffed! I topped with lettuce, peppers, and red onions. I was wishing that I had some guacamole, but alas I did not.
THURSDAY, May 1st – Smoked Sausage and Sauerkraut
I had a very busy day on Thursday and knew that I would be on the go all day and so I threw a dinner into the crockpot in the morning. Smoked Sausage and Sauerkraut.
Simple ingredients cooked well, this always goes down a real treat. You can also easily downsize it to feed just one (see the recipe notes). I cooked a full batch on this day so that, again, I could put some into the freezer for a later date. I also shared some with my next-door neighbor. She loves sauerkraut just like me!
The sauce that graces these browned boneless chicken breasts is lovely. Rich and velvety. Chicken broth, heavy cream, grated Parmesan cheese, lemon and a few spices. That’s all you need to create this incredible combination of flavors!
What you have here is a parmesan toasted slice of buttery sour dough bread, topped with an all-beef patty, which has been topped with Pub Cheese and sauteed onions. The burger is briefly covered after you add the cheese and onions to the top so that the cheese can melt.
